Easter Brunch

My parents visited for this Easter weekend and after scouring Pinterest for some new and fun recipes I decided upon a Cheese & Spinach Quiche and a Ham, Apple, Sweet Potato scramble to serve for Easter brunch.  Let's just say when you forget the sweet potatoes at the store, you don't end up making the scramble. Good lord, what a week! The quiche on the other hand turned out perfect! I have to say it might be my new favorite breakfast "casserole"/egg bake.

One important thing I've discovered in using frozen spinach in dishes is to make sure you really dry out the spinach after you rinse it. If it is too wet it often makes the dish runny.

For this particular quiche I used swiss cheese and then a new favorite find, Sargento snack bites. I cut them up and threw them in the mixture.
There are a few different flavors and there is currently a rebate on Ibotta for them!



Perfection- so good I forgot to capture a picture before we dug in!
And I must say for the girl who HATES leftovers, I have been enjoying it for breakfast this week.

Apparently they still do this. I went to take out some cash for Big 12s and look who came away with a sucker. Oh yah, and the Big 12 Championship!!

MGA Triple Crown Showdown Update

We are plugging right along for the 7th Annual MGA Triple Crown Showdown. We are under 8 weeks away! (5/21/2017)  So many exciting and new things happening this year. For the first time ever we have our own merchandise for sale!  You can purchase any of these items when you register!

Also for the first time ever we are offering a brunch buffet at Hereford House - Leawood following the run. You can purchase tickets online when you register or at the door. $15 all you can eat buffet with a cash bar. I noticed yesterday that the Hy Vee brunch buffet is $14.99 so consider this a deal! Part of the proceeds from brunch go back to the Myasthenia Gravis Association.

A new CycleBar has opened at Leawood's Town Center and they were going to be hosting a charity ride for us (spin class) on Sunday May 7, 2017. 100% of proceeds from the charity ride will go back to the MGA! How awesome is that. If you plan to go you'll want to reserve your bike as there are only 48 bikes. More info to come.

Last year the MGA Triple Crown Showdown attracted 475 runners, walkers and tot trotters. It takes us about 100 volunteers to pull off the race. Not interested in running or walking? We could totally use your help! www.mga5k.com and then click volunteer! Thank you! 

Identical to last year we have once again partnered with Courtyard By Marriott- OP Convention Center for a block of rooms. The hotel is on the edge of the 5K route and they have been so good to us! You can click here to book a room. To get the discount rooms must be booked by 4/28/17.

During the month of April we will wrap up sponsorships. To date we are up over $13,000 in sponsorships and are super excited to have partnered with some new businesses and groups. If you cannot make it to the run but want to  support us you can donate here.  We appreciate any and all donations.

Thank you for your continued support of the MGA Triple Crown Showdown. Never did I think 7 years later it would be going stronger than ever. I think for all of the committee, 99% volunteer, that some of the roles are a full time job in addition to our full time jobs! But oh so fun and I wouldn't change it for the world.




Hope Lodge

My Culinary Club meets the 3rd Tuesday of the month, generally at a new restaurant (non chain) in KC. For the month of March we decided our Tuesday gathering would be to give back. It was decided we would give back to Hope Lodge, which is run by the American Cancer Society and provides housing to adults going through treatment for Cancer. We made breakfast for dinner and served it up to some 45 people living at Hope Lodge. It was a gentle reminder that my health issues are nothing compared to what some of these people are going through.  A gentle reminder that life is precious and you are never guaranteed tomorrow.







If you are local, Hope Lodge always needs volunteers to prep dinner for their individuals. They were all very gracious and it was a great volunteering experience.
