It has been a very stressful week around here. Lots of time management needed on a bunch of different priorities or roles I have taken on, plus a whole bunch of craziness on the work front. I have found myself wanting to slip into bed an a very early time and shut off the world. I was so stressed Monday, I noticed my right eye was weird. (A definite symptom of MG that I should NOT be seeing right now) As days have passed and the weekend appears, I am reminded of ways to reduce stress. Always good reminders. Cheers to the weekend, a glass of vino and some upcoming snuggles with my favorite little guy in the Windy City.

Blueberry Coffee Cake


One of my favorite things my mom makes is Blueberry Coffee Cake. It's a bit of a pain to make because the dough becomes so thick but it is so tasty!

Blueberry Coffee Cake
3 C flour
1 C Sugar
1 teas baking powder
1 teas soda
2 sticks butter
2 eggs beaten
1 C sour cream
1 teas vanilla
1 21oz can blueberry pie filling

Topping
1/2 C flour
1/2 C sugar
6 T butter (sliced)
Mix together

Measure and mix dry ingredients. Mix in butter with mixer. Add eggs, sour cream and vanilla. Beat well. Spread 1/2 batter in a greased 9X13 pan. Spoon pie filling on top. Spread on remaining batter. Sprinkle on topping and bake at 375 for 45 minutes.

MGA Triple Crown Run

Carrots

I guess I'm feeling more and more like an adult these days and more guilty about wasting food. Hence, a bag of almost disgusting carrots in my fridge. I took to google and found a recipe to spice them up and make them presentable. I actually liked them which is big because I'm not much of a carrot person. Well unless it's cake.

Garlic Cooked Carrots

Slice Carrots into large chunks
Melt 3-5 TBSP butter in a dish
Sprinkle in Garlic Seasoning (I used Tastefully Simple Garlic Garlic)
Sprinkle with Parsley
Cook at 375 for 35-40 minutes until soft.

My Mama's Enchiladas

My mom has a new enchilada recipe she shared with me at Christmas. It's a new fave and it makes a ton and you can fill the freezer with pans of them which I LOVE.


Chicken Enchiladas


Brown 2 large chicken breasts in oil.  Cook 20 minutes total. Cool and shred chicken. In oil, put 1 cup chopped onion, 2 4.5 oz. cans green chilies chopped and drained, and one small green pepper chopped. Cook until softened. Add 1 cup chicken broth and shredded chicken.
In separate bowl add 2 cups plain Greek yogurt, 1 8oz. hot jalapeño cheddar cheese and
1 8 oz. chipotle Monterey Jack mild cheese shredded. Add 2 tsp. chili powder, 1 1/2 tsp cumin, 2 tsp garlic powder, 1 tsp freshly ground black pepper. Mix all and add chicken.
Warm 18-20 corn tortilla in microwave on paper towel for 20 seconds.
Spray pans with oil. Put 1/3 cup mixture on tortilla. Roll and put seam side down about 10 per pan. Cover with rest of chicken mixture and cilantro. Bake 35 minutes at 350° with a foil cover. Serve with salsa or sour cream.

As you can tell from the picture, I was a little excited to EAT them and took no pictures preparing them.

Cracked Out Quiche

It's Valentines Day. My dishwasher flooded my kitchen. I had all the ingredients and thought I deserved a treat so I made Cracked Out Quiche (full of unhealthy goodness) It's pretty delish. I added red peppers because I had them and thought it needed a vegetable. Click here for the recipe.



Corks & Crafts Round 2

You may recall a few years ago I belonged to a group that got together for crafts once a month. Lots of things happened, people moved away, people had babies and the group fizzled. I was really missing this crafty time so decided a few months ago to invite some new people to get the group going again. We had our first "Corks & Crafts" Thursday night. I hosted and make chicken chili and fixings and it was so much fun! I am not too keen on the project I made so it may just go in the trash or closet (and be revitalized at another time) Below is my inspiration.

Artful Eating

I feel like all I have written about in 2016 is eating. Ha! I've really done more than eat in 2016. However I do have to share about a new place I went a few weekends ago for brunch. Cafe Sebastienne is located in the Kemper Museum of Art in KC.  They have seating in an enclosed courtyard which has great light on a sunny morning like I experienced and truly delish.  I didn't take any pictures but I'll leave you with one of their own.

You may recall a few years ago I wrote about eating at the Nerman Museum at JCCC. Ironically, I had a work lunch there this past week and was reminded too of what a great dining place it is. The Museum store has closed but Cafe Tempo has the same great food. So if you are bored and looking for someplace new to dine, don't forget about local art cafes.

Sun Dried Tomato Pasta and Feta Skillet Bread

My mom came a few weeks ago to take me to a treatment. She ended up coming down a day early due to the weather which allowed me to prepare a fun dinner. I combined two recipes I had seen on, yes, of course, Pinterest that involved Sun Dried Tomatoes and Pasta to come up with this. Mostly because I did not have the tools to make Zoodles although I do think that would be fun to try. And a much healthier version.

It turned out really good. Although I was not so impressed with how it tasted as leftovers so I would probably make less the next time. In addition to a salad, I also made (or rather my mom made) Feta Skillet Bread. Another Pinterest find. 
Obviously we liked it as this was what was left. So much for taking a beforehand pic. And we improvised a bit, I do not have a cast iron skillet so we threw it in the oven.





Early Valentines Brunch

I hosted a brunch on Saturday with some sorority sisters from college. It was the first time to use my new dishes to a gathering which was so fun. Unfortunately I failed to take a picture of  us. So great to catch up with the girls! I made a new Quiche recipe which was so delicious! Check out Tomato and Fresh Corn Quiche. So mine didn't exactly have fresh corn, not that time of year! I was able to make it on Friday so I didn't have to rush around Saturday morning cooking which was so nice.

Hello Art

I attended the 6th Annual Celebration of Hello Art on Friday at the Hotel Phillips.
What a cool organization that brings together local artists of a wide variety for the greater good.
It was a very impressive event at an impressive location. Check out Hello Art!
