Friday Food for Thought

You can't even escape Fox News in Aruba.

I really wish people would ask before they put a lemon in your water at a restaurant. Haven't you heard a lemon has a crazy high amount of fecal matter on it at a restaurant. Gross. Leave your poop out of my water, thanks! :)

I was shocked that the Atlanta airport still allows smoking.

Allison and paint always leads to an interesting story. Let's just say Dad that part of the garage floor is now red.

It's a good thing summer squash tastes so fantastic because to cut one open you almost need a husband. Seriously. Had to get out the biggest knife I had to get that sucker to open. A clever I think?

I bought a Groupon to Social Suppers recently. So fun to go there and make meals, come home throw them in the freezer and not have to worry about, "what's for supper!" Also it was a great deal financially. 6 meals with 3 servings each for $35.

Chewing gum (rather snapping and making bubbles) in church is completely inappropriate. Manners people.

The county recognizes almost every holiday in the book but they don't recognize President's Day as a holiday we get off. I wonder why. I'd appreciate it if they did!

God answers prayers in 3 ways, "yes," "not yet" and "I have other plans"

My friend Susan's sister is bringing home 3 children from Ghana today that they are adopting. I have goosebumps. Such a cool thing.

Vegetable Cups

My mom gave me this recipe several years ago and I came across it recently. It's a great recipe to prepare on the weekends, throw in the freezer and eat for breakfast each morning. I believe it also comes from the South Beach Cookbook, so healthy.

Vegetable Cups

3/4 cup egg substitute
1/4 cup onion diced
1/4 cup red/yellow or green pepper diced
3/4 cup cheese (I use Feta)
1 10 oz package of frozen spinach thawed
You can season however you wish. I use Italian seasoning and sometimes a dash of hot sauce.

Cook spinach in package for 1 minute in microwave. Drain and take out of package.  Set aside. In a large box mix egg substitute, onion, pepper and cheese. Add in spinach and seasonings.  Place foil muffin cups in a muffin pan. Spray with cooking spray. Dish a spoonful of the egg mixture into each cup. Cook for 25 minutes at 350. I then bag the vegetable cups and put in the freezer. You can pull out right before you want to eat and cook approximately 2 minutes in the microwave.  I've found if you use a silicon muffin pan it doesn't cook as well and takes much longer for this recipe.

2 Months!

Two months from today we'll be celebrating the 2nd Annual Greater Kansas City Myasthenia Gravis Walk, Run and Roll! I can't believe it is just two months away.  We have two new sponsors, Lee's Summit Martial Arts and American Family Insurance- Vince O'Halloran Agency. We appreciate their support!

Buttermilk Ranch Dressing

I love ranch dressing. I love dipping things in ranch dressing. It's my guilty little pleasure. A few weeks ago a dear friend was over for lunch and she pointed out that my ranch dressing had expired in January 2010. Imagine my shock! A bit mortifying too. That's why I shouldn't buy things in gallon size or whatever that was.  Anyhow, it quickly found its new home in the trash.  Yesterday I was making a lunch that I knew would go best dipped in ranch dressing when I suddenly recalled my ranch dressing was long gone. So I googled buttermilk dressing. So easy! You take 1/4 cup of lemon juice and top off with a cup of milk. Let stand 5 minutes to make buttermilk.  Then I mixed it with my Penzey's Buttermilk Seasoning and voila had the best ranch dressing I've had in awhile! Well, at least better then the ranch that expired in 2010. Thanks Annie!

Thoughts from Aruba

For several days I have been trying to think about how to blog about Aruba and our experiences there.  For the most part it was a vacation with the days spent by the pool/beach with a book in hand. (I read 5 books while we were there!) Happy hour in the late afternoon and then walking to dinner while stopping to shop in some stores along the way. It was a fantastic week of relaxation, rest and some serious sun time. Although my tan is fading WAY TOO FAST!

Well since most people like humor I thought I'd recapture the Top 10 moments funny moments or highlights of vacation. Mama Barb may or may not agree.

10. Airtran airways can most easily be related to being the Kia Motors or Motel 6 of the travel industry.  Think Mama knocking of a piece of the plane armrest on the seat ahead of us off just by touching it. Foam hanging out of the ceiling where the sides and top connect and the leg space in between seats wasn't nearly big enough for the vertically challenged Foss women. Imagine that!?
9. Airtran Airways reminding us on every flight that they will be serving drinks in the "main cabin." Where else are they going to serve them, on the wings? Seriously.
8. Aqua Aerobics everyday at 1pm at the pool. No joke!  Bingo following aqua aerobics every day at the beach bar. Prime prizes included fruit baskets. And NO we didn't play. They play bingo on the loud speaker so everybody can hear!
7. Of course I found a winery in Aruba! Going on a tour there was probably one of the coolest things we did.  So interesting to see all of the plants they grow.  A near pee my pants moment when a rat ran up in the wall in the wine cellar however.  While the wine wasn't nearly as fantastic as the experience I am so glad we went off the beaten path for the adventure!
6. I didn't have any hair mousse the whole vacation. Even though I went and bought cute little travel bottles. Apparently so distracted to go on vacation I bought 3 cans of travel hair spray instead of 1 can of mousse, 1 can of hair spray and 1 can of hair paste/wax.  Oh well.
5. Caribbean driving. Driving in the caribbean and the cars they drive always leave a little room for laughing. And there are usually random dogs wandering around too.  No worry in the world.  Such a laid back atmosphere. It's just funny observation.
4. Old lady at the pool who wore a hair curler in her bangs and a hair pick in her clevage every day. She had trouble getting in and out of her chair which also was a cause of some giggles. Yes, I know making fun doesn't make friends but you just had to see it.
3. Lunch at the beach bar one day when Mama turns around to a white butt cheek right in her direct view.  No holds bar about size, shape and swimsuit coverage in Aruba.
2. Allison nearly tripping face first in the water when trying to walk in the ocean. The drop off was a little bigger then I expected. 
1.  Larger than life Iquanas wandering all around in the pool area. They'd come and chill out just under your chair.  Never seen such large iquanas. Not that I see iquanas a lot anyway!

At any rate, there are no words to describe the goodness of this vacation. I haven't had time away just to relax like that in such a long time. It seems my travels are always for something; for a wedding, for a game, to visit family and this was just pure chill out time! I need to make a point of doing that more.  Aruba is safe. Aruba is beautiful. Aruba is warm. Aruba has a beach. You should go there.

New Necklace Holder

Being that I live in a house built in 1950 with wall-papered closets, space is really at a premium! I had all my necklaces hanging on hooks behind my bedroom door but my scarves were also hanging there and it was too much chaos! A few weeks ago I spotted these frames at a thrift store. Believe it or not they were already painted these colors of pink so no extra work with any paint.  I nailed some tiny nails in the tops of them and they have been transposed to my new necklace storage!

Alright, I admit it, I miss Oprah dearly in the 4pm time slot. Dr. Oz just doesn't cut it. Yesterday he did have some great snack recipes though.  I tried one today.  Wrap a piece of prosciutto around a piece of low fat string cheese.  Delish!

A little pick me up

This precious note arrived in my mailbox today. Sent from one of my favorite little Kansas Citians- Samantha. You may have recalled I wrote about my friend Leigh Marie's daughter in a Friday Food for Thought recently. After the mornings chaos with my palatal lift this was a huge lift to my day! So precious and so grateful for the dear friends I have in KC.

Losing my Voice

I think most people know that for the last 11 years I have worn an adaptive device called a Palatal Lift which has held my palate in place for less hypernasal speech brought on by Myasthenia Gravis.  This little device has literally given me a voice.  Why the University of Iowa failed to get me one sooner is anybody's question.  This little device has a hefty price tag and I take very good care of it as insurance does not cover its cost!

I've had a few glitches and accidents with my palatal lift over the years. Actually this little pink guy is my second device and in another 3-5 years I'll need another one. Chalk that up to about $3,000.  Usually at home I don't wear it because I am by myself.  I took it out Wednesday night, slept a good nights sleep and got up Thursday ready for the day.  When I popped it in my mouth to start making calls Thursday morning I realized it wasn't going in.  Baffled I first thought maybe food was caught it in so checked it out, nothing.  Please realize that I have two clips that have been sodered onto my teeth which hold this puppy in place.  I tried a second time and nothing, it wouldn't stay in. So I got up and brushed my teeth again thinking that food was stuck on the clip. It was after I put my finger in my mouth I realized the clip on the right side of my mouth was gone. Yes, gone. Like no longer on my tooth.  It appears that during the night I must have swallowed the clip? Who knew. The clips are 11 years old and the doctor said they could wear over time and that could happen.

When I realized there was no way to wear my lift, I texted my mom a HELP message.  Luckily, she was able to quickly call and get me an emergency appointment at the Prothodonist where a clip was re-sodered onto my tooth this morning.  Talk about a gagging, teary eyed appointment. Think disgusting taste in your mouth and yucky sounds to get a clip remade.  We are back in business though and with a voice.

This little incident however is a great reminder of how much we take for granted.  Losing my voice for just a mere couple of hours without my device was so debilitating. Work calls stalled, work meetings cancelled, everything on hold. Think about those who can't hear or can't see.  Imagine what they feel.  I can't help but think this happened for a reason to bring me back to reality of what I really have in life. I have no idea of hte cost of having my clip remade. But I know that having a voice is priceless.

Aruba was fantastic! I think I forgot I had a job and things to come home too. So very relaxing! I'm working on another post to come of all our adventures and great times but am trying to get things back in shape to return to work. Making Muffins

I have never attempted to make muffins outside of being in a box or package straight from the store. When I came across this recipe in Penzey's magazine I decided to give it a whirl.  I'm in love with Penzey's Spices and the fact that they have a cute little store in my neighborhood downtown makes it extra convinent! Sign up for their catalog and you get a coupon for a free spice nearly every other month!

Cherry Almond Muffins

1 bag of frozen cherries
2 3/4 cups flour
4 eggs
1 tsp baking soda
1/2- 1 tsp Almond Extract
1/2 tsp pure vanilla
1/2 tsp salt
1 1/2 cups sugar
1 1/2 cups sour cream
8 TB/1 stick butter- room temperature

Preheat oven to 400°. Grease and flour muffin tin cups or line with paper muffin cups. Combine flour, soda and salt in a bowl and mix well. In a separate mixing bowl, cream together the butter and sugar until fluffy. Beat in the eggs, ALMOND and VANILLA EXTRACTS, sour cream and dry ingredients. Mix until just moistened (overmixing will make the muffins tough). Fold in the cherries. Fill the muffin cups about 2/3 full with batter. Bake at 400° for 20-25 minutes or until a toothpick comes out clean and the tops are lightly browned.

Note: Sour cherries can usually be found frozen, canned or dried. If frozen or canned, drain off any juice before using. If dried, chop into smaller pieces and they taste great as well!

I think that 25 minutes is almost too long to cook them- or in my oven it was. Let's hope they taste as good as they smell!

As we inch closer to April 21st, I am excited that we are ahead of where we were last year at this time. Nose in the books

After the new year, I started making a pile of the books on my very dusty bookshelf that I might like to read on the beach.

Here again, I am the blacksheep of my family as in I don't read as much as they all do. I like to read but at night I am too tired to read and on the weekends or after work I don't like to sit still, my hands have to be busy therefore reading doesn't fall there either.  And over the years as my Myasthenia Gravis has progressed, it's not as easy to lay and hold a book up. It hurts my arms and makes it hard to turn the pages. I know this sounds funny but just a few weeks ago was talking to one of the sponsors of the MGA Run, who also has MG who asked me if I had trouble holding a book for a long amount of time because that really frustrated him.  That being said, my books get dusty very fast. 

However, I think curiousity got the best of me when I was picking out books for my trip and believe it or not I already read 4 of them that I planned to take with me! Luckily, there are still about 40 books on my shelf waiting to be read so I just made a new pile! May I reccomend to all, The Happiness Project by Gretchin Rubin. Great read especially for the start of the new year!

Friday Food for Thought

Where God takes you is where you are supposed to be. 

I must admit, I'm not really into all the award shows, Academy Awards, the Golden Globes, the Emmy Awards. Blah.

This question was proposed earlier this week, if Newt Gingrich was to become president would Callista be the "Third wife" instead of the "First Wife?"  Good question and as one suggested by the time of the election there could even be a "Fourth wife!" Deep thoughts....

I LOVE the Mayo Clinic- a true testament of the place. I got a personal letter from Dr. Engel this week following up on a potential treatment recommendation with an article he thought may interest me.  Talk about being a name and not a number. LOVE LOVE LOVE the kind of care they provide there.  I wouldn't wish it upon anybody to be sick but if you are, don't waste your time, just go to Mayo!

Whenever the Bachelor is on, I miss my friend Kara. I can just hear her saying, "sissy what are you wearing," or "look at that b*tch!" Kara, I miss you! Time to plan a trip to DSM! :)

Trust takes years to build and a moment to destroy.

This week I learned that the spring Nascar race is the weekend of the 2nd Annual Greater Kansas City Myasthenia Gravis Walk, Run and Roll. Who knew we'd have competition with jean shorts, mullets and chewing tobacco for hotel rooms?  Not to fret, Hilton Garden Inn has a great deal for us! If you need the codes email me and let me know!

I have a big dilemma keep the auto correct on on the iPhone and it corrects stuff you really mean to type, take it off and it's an even bigger disaster!

Grilling out with the windows open on January 31. Yes, please.

I realize it's been really warm this winter but the Ice Cream Truck is back making the rounds through the neighborhood and I think that is just weird.

To the 23 year old chick on the Bachelor who told Ben she had accomplished everything she wanted to accomplish. Wow, what an over-achiever! Seriously now, get your head out your a**. 

Last night I tried the Blvd Chocolate Ale, most know I am NOT a beer drinker. But I actually LOVED it. Chocolate Beer, who knew?!

6 days later, you better believe I am still smiling about that Iowa State victory!
