I decided to take this stay at home opportunity to attempt the “baby feet mask.” I’d been wanting to try it for awhile now. But holy moly my OCD is about to go over the edge. Watching your feet peel over the course of several days has proven more than just disgusting. I’m grateful for real pedicures and I will be so thankful when I can safely go and get one. Realizing that is likely several months down the line! Until then just over here leaving feet particles all over the house.....

Since I'm home all.the.time, I have time to make things like homemade spaghetti sauce. Move over Ragu. Last night, I pulled out a cookbook that my Mom put together of my Grandma McCreedy's recipes. I am so grateful for my mom that she put all the recipes together in this book and gifted to each of us. A great tribute to her mom and I know it was a lot of work to put together! I will always remember my Grandma McCreedy for her spaghetti sauce and mustard bread! So good and not something I have time to mess around to make very often. My book is well loved and has been used a lot through out the last 17 years. Thanks Mom!

Black Bean and Sweet Potato Enchiladas

Let it be known, I do not like sweet potatoes!  Not even sweet potato fries. So when a giant one showed up last week in my produce box from C & C Produce I had to seriously think about what to do with it. I had supplies on hand to make enchiladas including some cilantro that needed to be used so when I came across this recipe it was perfect.



Cinco de Mayo is coming and this would be a delicious dinner!  I also divided these into 3 pans and gave 2 away.  I don't do well with leftovers and enchiladas always make a lot. Also, I layered the tortillas instead of rolled them because sometimes that is just easier!  Enjoy!

Yesterday was not my best quarantine day. I've been saying I've been living my best quarantine life because I pretty much have. However yesterday was a doozy. I'm so grateful the sun sets each day and the next day is a chance to start completely fresh. It's starting so fresh I have even washed my hair after 5 days..... gross! Here's to a new day! ☀️

Yesterday I planted my flowers and herbs I got last week. As much as I love my flowers and plants, I am terrible at keeping them watered. So when I awoke to the rain I was so grateful! Usually not a fan of rainy days but it was like a good omen on my freshly planted flowers!

As I was reflecting what I was going to write today I was thinking about the last couple of days. On Friday night I participated in my first ever 40th Surprise Birthday Parade for my friend, Denise. I love birthdays and it makes me sad to think about people celebrating their birthdays in quarantine because I'm a firm believer of you should go all out. Also because on the flip side of it, the opposite of not having a birthday is, well pretty crappy, so today I'm grateful for birthdays. I ❤️ to celebrate my own. I ❤️ to celebrate those of the ones I love. I ❤️ a damn birthday sheet cake straight from the grocery store ðŸ˜‚, and I ❤️ to spend time finding the right birthday gift to give. Here's to more birthdays, more celebrations and hopefully more cheers in person at some point down the line.🥂🎂🎉

If you didn’t want to have your hands in much technology before COVID-19, I bet you do now! In the past month I’ve gone to church online, thanks Holy Cross Lutheran Church- OP, celebrated birthdays online, played Cards Against Humanity on Zoom with friends and last night went to The Nadas concert online. Today, the Myasthenia Gravis Association will host our 2nd Zoom Support Group. I’m grateful for all the ways technology has kept us connected during this time.

I had to stop and think about what day this was, day 32. Over a month. A 1/3 of a quarter. One 12th of the year. Just over here living my best quarantine life and trying continue to make my home as comfortable as possible. Which leads me to flowers. Today I'm grateful for flowers. I ❤️ flowers and planting them each spring. I was so excited yesterday when a truck pulled up outside my house to drop off the flowers I'd ordered from the Cornerstones of Care Plant sale. A little hard to get out and do flower shopping with our current situation so when I saw I could support Cornerstones of Care and get some of my flowers it was a done deal! Excited to get these guys planted this weekend. If you are itching to get some flowers planted like me, check out their plant sale and get your flowers delivered. It's runs through May 13th. Such a win win because it supports a great cause!

I got up early today and started making an egg bake. Remember all that food I got in the produce box! As I was putting it together I was thinking "how lucky am I that I've gotten to stay home for 30 days." I did a lot of whining and complaining this winter about how little I was "home." Then the glass lid to a baking dish slid off the counter and crashed into a million pieces on my kitchen floor. That's a little bit how COVID-19 has been. Life was progressing right along and then everything shattered into a million little pieces. It's been a bold reminder of how precious life is. How quickly it can change. How important it is to have a village and to be a village. I didn't enjoy picking up glass off my slate tile floor at 5:58am. I certainly haven't enjoyed every minute of these last 30 days but I have learned a lot about myself. Even about others. Today I'm grateful for the ability to reflect. My original plan was to fill my 30 days with gratitude to try to stay in a positive mindset. As our Stay at Home orders have been extended in Kansas City, I'm going to keep on going until the orders are lifted. Thanks for following along.

One of the cool things that has come from this challenging situation we are all in, is how the community has come together for the greater good. Some of my friends were talking about C & C Produce on a Zoom happy hour. C & C Produce provides produce to many area restaurants. During this time they are offering the Community Box for $20 cash so they can continue to buy produce from farmers and feed the community. I got a box this week. Huge thanks to Katie Ott Campbell and Jared Campbell for snagging my box and delivering it to me so I would not have to get out in the public! I have enough produce for about 3 weeks but so excited! Things I wouldn't have normally bought and supporting local. I'm so grateful for farmers, fresh produce and those doing good in the community! If you want a box, go to their Facebook page for instructions on ordering and Monday pick ups. It also looks like they are offering a few boxes today!

I'm so grateful for the sunshine and spring weather we had this weekend. It was a definite spirit lifter and helped being isolated at home not feel so isolating. I was able to do a curbside pick up of mulch and I may or may not be able to walk this morning. Good thing for not having to walk far from my kitchen to office to bathroom. Peanut Butter Rice Krispie Treats

Planning meals during this pandemic has been interesting. Now I know cookies are not a meal but baking/cooking is also something to do more of right now!  Part of what makes it interesting for me is I can't go to the store and have to provide my list to others so it's planning with a capitol P!  I've been using Pinterest mostly so that it keeps the cooking fun and I'm trying new things.  I've made a few old staples too but generally trying new things.

As part of this planning, I realized never in my life have I attempted to make Rice Krispie treats so as part of a Target online order I ordered all the supplies. I ended up making a different version of Rice Krispie treats, part original part scotch-a-roo! The first batch didn't live up to the hype I don't think, but the second batch was great.  And in an effort to stay the same pants size, I try about 1-2 of the sweet treats I make and then send them on their way to a new home!

A bit of a copy from Natalie Horras' Gratitude Challenge, which is where I got this idea, I 'm thankful for soap. Especially Mrs. Meyer's soap! It's seriously the best and I don't think I ever gone through so much soap in my life. Also thankful for Target online where I found these goodies. BTW, Natalie has done this gratitude challenge daily for going 18 months? I think! So impressive!

As the list grows of people whose jobs are impacted by our current situation, today I'm grateful for my job. Not only am I grateful for my job, I'm grateful that I'm working a job I'm passionate about and that fulfills me. While this has been the hardest job I've ever had, I often remind myself that good things take constant work and attention. I'm so grateful for our staff, our Board of Directors, our Medical Advisory Board and our volunteers. I'm also so grateful for the partnerships the Myasthenia Gravis Association has. Our recent partnership with Focused Story Films - Commercial Videography/ Focused Story Films - Wedding Videography where they this video about the MGA makes me smile. We had utilized Brian Elliott to do a MGA Triple Crown Run video for us in years past and he approached the MGA and asked if he could donate his time and services to help us out. Amazing! Some of the recent days have seen a lot of yuck, but I have to remind myself there is so much good. Have a great Saturday!

I know this is an extremely challenging time for restaurants and bars.  It breaks my heart knowing the season they are facing.  Kansas City has such a cool community of locally owned restaurants and bars.  Many of them are offering all sorts of curbside pickups and deals right now.  I'm so grateful for that because I've been the recipient of some amazing take out orders dropped off by friends from some of these yummy places!  I'm also grateful for my KC Culinary Club which frequents a new, local restaurant every month. I miss my Culinary Club friends and am so grateful we've connected through Zoom for happy hour twice during these last few weeks. Help spread the love and share your favorite LOCAL restaurant/business that is offering a curbside to go option or deal you want others to know about! And if you say, Olive Garden or Panera, you're going to schooled on what restaurant list those go on!

Can we just give a shout out to dry shampoo? Pretty sure this word didn't even exist in my vocabulary until the last few years. It's nearly silver in a can! Not gold in a can because that's Diet Coke! Spray a little here, spray a little there, do some teasing and you are good to go! I was sick in February and missed my hair appointment, missed it in March due to COVID and with our Stay at Home Order have no clue when the next one will be. It's about 5 times too long and depressingly gray but at least it can be clean with a few sprays. Today I'm grateful for dry shampoo.....

Last fall, I celebrated a birthday that ended in a big fat 0 and I was fortunate enough to take an amazing trip with a crew of amazing friends from various times in my life. It was one of the best trips I have ever taken. It was 4 days jam packed with wine tasting in Paso Robles, CA. I highly recommend going there and would be happy to share any tips, our schedule or connect you with people who know what's up there! This past Friday, part of the Paso crew got together on Zoom. We probably wouldn't have thought of it unless we were living in this season of our lives. It was so much to connect and see each other. Here's to more Zoom calls with cheetos and Full Draw. Next time I'll bring the sheet cake. Today, I'm so grateful for the Paso Crew and memories of our trip that keep me giggling and lifted up. Until the next one!!

A delayed start on my gratitude for today as I had a Plasmapheresis treatment at KU this morning. I think this was only the 3rd time that I’ve been by myself in over 11 1/2 years of doing them. Being alone during something like a treatment is completely terrifying and it makes me think about how COVID is affecting our normal. It also makes me think of all the people battling COVID who lay in hospital rooms all by themselves. For me it was only 4 hours alone but many of them are spending days and hours alone trying to get medical care. Today I’m grateful for my treatments which allow me to continue to function and live and my good benedryl naps which take the edge off something not so fun. Now back to napping. Picture is a few years ago at a treatment because are you kidding, my hair is gray right now!! Thanks to the village who helps me out on treatment days and days in between!

These last few days I have been thinking of Easters I spent as a child. Generally, Easter was spent with my Grandma and Grandpa Foss and it was done with a lot of fanfare and fuss. My Grandma Foss was known for gifting outfits to my siblings and I and if she could play a part in any of our Easter dress she most certainly would. It's only been in recent years that I could take a risk and eat "ham" again because she also loved to serve a very well done thick slab of ham, accompanied with a side of jello and dinner rolls. However the memory that sticks out the most though, is my Grandpa Foss. He'd sneak out of church to go "count the money" and he always wore this blue seersucker suit. Then we'd arrive home and huh, Grandpa would already be there and it'd be time for an Easter Egg hunt. We'd race from tree to tree and behind the thick drapes in the living room to collect the eggs in our Easter baskets actually crafted by my Grandma McCreedy. My Grandpa Foss was a quiet man but he loved us so. My Grandma generally wore all the personality. But it's my memories of him at Easter that I tuck so close to me. It was his role to hide the eggs and make this a game. He took responsibility to heart especially if it had anything to do with making his grand kids smile. I'm so grateful for my memories of Easter as a child. This year Easter is different. No over done ham or jello salad. No fanfare or fuss about what to wear. Hello yoga pants day #101. However, today I'm grateful for those holiday memories at 425 Woodbridge with that very special set of grandparents.
I had to enlist in my mom's help to try to find a picture of my Grandpa Foss at Easter and we weren't successful. So here's a few Easter memories and one of Grandpa and I in 2000. And I have no idea why my Easter basket here is a brown paper bag and not my pink basket I described above! It quite possibly could have been because Grandma bought more eggs than our little baskets could carry!

Unstuffed Eggroll

As I continue to move through my Pinterest recipe board during this quarantine, I finally tried a recipe for an Unstuffed Eggroll.  It was easy and really tasty.  I added some frozen crab rangoons and it was a tasty little meal.  I did not have ginger and I substituted the shrimp for the beef.  Also, it did not save well so I'd make about a 1/4 next time or invite people over to enjoy with me!

Today was a day I was really looking forward to! Opening of the Overland Park Farmers Market, the KC Gangster Tour with a fun crew and a probable happy hour at my favorite, Nara. What’s that they say about best made plans? Yah..... I’m grateful today for Kansas City! Home to me for nearly 17 years. It’s been fun to see KC evolve over the years and to discover the city’s little gems. It’s close enough to home, yet still far away, has 4 seasons, which has its highs and lows, generally no traffic, excellent medical care which is important for where I live, some pretty great restaurants, a thriving non profit community and how can we forget, a great place to celebrate Hilton South!!!

Friends, Food, Fridays and Fountain diet cokes, who am I kidding, these are a few of my favorite things and I'm so grateful for them! I have always known I have an amazing circle and tribe and no time like being isolated in your home to truly be seen that. I am so thankful for all the friends who have dropped off food, treats, FOUNTAIN diet cokes. I am so lucky and I can't wait to repay all of you! And by the way, I can't figure out if everyday feels like a Friday or a Monday or a Saturday. Gone are they days I'm googling happy hour deals based on day of the week! Hoping they return soon....

Cadbury Egg Easter Cookies

I nearly made the perfect cookie on Sunday.  If you follow my blog you know most cookies end up looking like a train wreck.  My mom tells me I inherited that trait from her. Probably true but pretty certain my dad has never attempted to make cookies in his life!  These outdid themselves! I have a soft spot for Cadbury eggs so ordered some from Target.com in order to make these.  You never know what Target will deliver until you are faced in quarantine.  They were severely overpriced at Amazon, btw!

Today I'm grateful for social media. Social media has been a great way to stay connected during this time of isolation and quarantine. We dealt with a couple of social media "bullying"incidents last summer at work and I almost deleted all my social media. I'm so glad I didn't because it has helped me feel as if I'm almost in others homes and not just in my own, with my dog who decided to leave a piece ðŸ’© of in the bed last night. ðŸ˜‰ Thanks for staying connected!

Chances are, this will be the most raw gratitude challenge I will write. Many of the supporters of the MGA Triple Crown Run 5K will check their inboxes this morning and social media and see that we have made the difficult decision to transition the 2020 event to a virtual run. In the environment we are living, a large gathering of people on May 17th isn't possible. This decision has weighed on my heart and mind so much over the last few weeks that I've come to learn you can catch the Early Today Show at 3am and reruns of the Golden Girls on Lifetime air pretty much all night long. The Myasthenia Gravis Association is in the same boat as every non profit in this city, state and country with events that are scheduled to be held in the coming weeks and months. Each non profit has a story and a need for continuing to serve in their communities. I left a job I absolutely loved 2 1/2 years ago to lead the Myasthenia Gravis Association, with a goal for us to continue to reach patients and their families across the Midwest and guys, we are doing that. We are rocking that! In 2019, we were able to add a 3rd staff person and opened a clinic partnership in St. Louis at St. Louis University. We held a record number of clinics at the University of Kansas and met with support groups in 9 different markets. We are doing things that I dreamed of us doing. It has all come together, lots of tears, lots of laughter, lots of challenges but we are leaving footprints and making waves. I wouldn't have taken a chance if I didn't think this was possible and for the last 10 years (2020 is our 10th Anniversary of the MGA Triple Crown Showdown) we have been able to financially fulfill that need. To have to transition our largest fundraiser and biggest awareness event to a virtual event is scary. It's a change we definitely weren't anticipating. We're going to survive. We will make it work. We will knock on doors and make connections but on top of the pivot to a virtual event is the devastation that for the past 10 years, every spring, my family and my friends come together and I get to connect with them IN PERSON IN THE SAME PLACE, SUPPORTING SOMETHING SO NEAR AND DEAR to me and it won't happen this year. It's pretty much my favorite weekend of the year next to lake weekends and college football kicking off! It's an opportunity to surround with some of my best college friends, my best childhood friends and my best KC friends who are geared up for a charity event that benefits a cause I love! It's a dream come true. It's a hard pill to swallow. It's tears down my face, sad. ðŸ˜¢ So for today's gratitude, I just wanted to say how grateful I am for all my family and friends who have supported "the run" for the last 10 years. Whether you represent the MGA on the planning committee, run, walk, donate, volunteer, sponsor, I see you, I want to hug you (from 6 feet of course!) and I appreciate you. I will never forget the contributions you have made on my behalf. There are many who come to KC for this event across the miles and I will also forever remember that. Thank you for supporting the Myasthenia Gravis Association and the individuals and families who are impacted by MG across the Midwest. I 💓 real mail. I 💓 to send cards and let's face it, I 💓 to receive cards.  On a happy hour call recently we were talking about how much more mail people have actually been sending during this season. And in fact, my church Holy Cross Lutheran Church shared a link to request 3 free cards from Hallmark.  They have given out over 2 million free cards so the opportunity is done but you can read some of the cool stories about what they did here.  I'm grateful for real mail, both sending and receiving.  An exciting part of my day now that I'm here day in and day out, is when the mail man drops mail in that little box outside my front door.  And it's nothing short of  a little fanfare as Ries can sniff out the mailman from 7 houses away and prepares us by pushing the chair in front of the door and shamelessly running back and forth in front of the window to ward off the blue uniformed person stuffing usually paper into the box. 🤣🙄 Perhaps this challenging time will revive a tradition nearly forgotten because of modern technology. Here's to more mail, both sending and receiving!

Wait, it's just Day 14. How is that possible it's only Day 14? I guess on the flip side we are nearly half way through the first order. I'm coming around to the reality that this could go on for much longer! Today I wanted to take a moment to express my gratitude for the "cheap Kim." Costco sells this marvelous knock off Kim Crawford, Kirkland brand Sauvignon Blanc, Ti Point from the Marlborough region. It's a steal at $6.99 a bottle. I'd love to invite you over for a glass but that will have to wait! Costco used to only carry it in the summer but I stumbled upon it in January and bought a case. Apparently Costco was listening to the scientific news and preparing......................

Gratitude Challenge Day #13
Let's face it, these days are not all rosy and charming or as filled with gratitude as these posts suggests. In fact, some days its a struggle to find gratitude. As my hair grays by the minute and I ran out of deodorant Friday, I found myself saying "Thank God, l I'm not going to be seeing anybody for awhile!" A few years back, as I struggled to find gratitude, I came across this book which I highly recommend. 29 Gifts written by Cami Walker. Cami battles MS and this is her story of finding gratitude while living with a chronic illness. I love this book! I've given it as gifts and I refer to it when I speak at support groups about living life with MG. It's a quick read and truly enjoyable. I'm grateful to have discovered this book and learned about Cami Walker, which has helped put my own situation in perspective. And, side note, I Amazon primed deodorant AND hair dye so I'll be ready to bust outta here once given the all clear.
