For the first time ever I am hosting some family for Thanksgiving. I have been trying to do some things to spruce up my house and make friendly for guests. I found this printable on Pinterest and put it up int he guest room using pink cardstock for a background and a hot pink frame that I found thrifting at Blessings Abound.

Bacon, Spinach & Goat Cheese Spaghetti
Like most everybody, I have a gazillion recipes on Pinterest I want to try. I decided to try Bacon, Spinach & Goat Cheese Spaghetti the other night. I substituted spaghetti squash for spaghetti because I don't have the time or patience to deal with spaghetti squash. I wish somebody would market and sell an already cut up spaghetti squash- I'd eat it all the time. My other substitution was I added caramelized onions. If you haven't ever caramelized onions, it is so easy!
I forgot to take a picture of the finished product- go figure! But it was so tasty and light. I was however quite disappointed in the leftovers. I am not much on leftovers anyway but these were really not good the second day so when you prepare this make sure you make a small batch or have company to enjoy with!
Acorn Squash
I pretty much love squash of any kind but cooking it can cause more than just a little headache. I asked my mom for her Acorn Squash recipe the other day as its pretty much delish!
You'll want to bake your acorn squash at 400 for 30 minutes in a dish filled 1/2 with water.
Take it out and let it cool and slice in half. Scoop out the seeds and gunk.
Then put 1 TBSP butter, 1TBSP brown sugar and sprinkle cinnamon in each half. Bake for 30 more minutes at 400. Take it out, let it cool and then scoop out the inside and eat.
So yummy!

Thankful Tuesday
Every November I intend to start a 30 days of Gratitude post or program of some type and I never get it kicked off in time. At any rate, it's Thankful Tuesday and this Tuesday I'm thankful for this guy. Yesterday was his birthday. Cheers to many more, Dad! xoxo

Hello November

I'm pretty excited for a new month. November is one of my favorites, a month to remember and give gratitude which leads into one of my favorite holidays, which I am hosting this year! Got my chemo behind me and ready to plunge towards the holidays....
