Meatless Mexican Casserole


I love Mexican food but as I have gotten older I absolutely hate eating out for Mexican. I feel like it's the fastest way to over eat and be uncomfortably full. Gross. So when I find a new Mexican recipe I can make I'm thrilled.  This one is a keeper. I saw this on Instagram.  I copied and pasted it in my email and I have no idea who to give recipe credit to! So if that's you, thank you!

Meatless Mexican Casserole

INGREDIENTS

2 red bell peppers
2 green bell peppers
Jalapeno or 2 chipotle peppers (optional)
1/2 red onion
2 cups frozen corn
2 teaspoons chili powder
2 teaspoon cumin
1 teaspoon salt, to taste
2 cups Mexican cheese 
18–20 corn tortillas
1 can refried beans (I used homemade)
2 cups red enchilada sauce
cilantro, guacamole, or sour cream for topping


Pan-roast the veggies: Dice the peppers and mince the onions. Heat a large nonstick skillet with a little bit of oil over high heat. Add the onion, corn and peppers, sprinkle with chili and cumin, and stir, rest, stir, rest until you get a nice browning on the outside of the peppers. Remove and set aside.  Sprinkle the roasted veggies with a little bit of salt and toss to coat.

Grease a 9×13 inch baking pan and preheat the oven to 400 degrees. Cut the tortillas into thin strips. Put the refried beans in a bowl and mix with a little bit of water to make them easier to spread.

Spread a little bit of sauce on the bottom of the pan. Layer in order: half of the tortilla strips, ALL the beans, half of the veggies, half of the sauce, half of the cheese. Cover with the other half of the tortilla strips, veggies, sauce, and cheese.

Cover with foil and bake for 15-20 minutes, until the sauce is bubbling and the cheese is melted. Serve with guacamole, fresh cilantro, sour cream, or anything in the world that you want.

Serves 12
Calories Per Serving: 230 (without toppings/extras)


Delish!!  I even ate this for leftovers for every meal which is a major step for me!!

Wal Mart Find

By now you know I love anything with a monogram.  Some pillows I have on my deck with the letter F have gotten so faded and gross. I was looking for the exact same pillows which I believe I got off of Living Social years ago. Living Social and Groupon are some of my favorite places to find monogrammed items. 

As I could not find anything on Living Social or Groupon a google search populated these pillows at Wal Mart.  A little less than $20 a piece. You pick the color and style and delivered to my door in 3 days.  Also, these are specific outdoor pillows!

Life Lately

Without a doubt, I don't think I have ever felt so "all over the place" in a season in my life as I do now.  I believe I wrote the same thing last year around this time.  It's the nature of the beast and I'm just trying to figure out my way.

Part of life is learning as you go, what's gonna work and what's not. As I starred at a pile of 6 months worth of ironing day after day, I decided to drop it off at the cleaners to be ironed.  My dad has been bringing his dry cleaning to KC for the last year after the mom and pop dry cleaners closed in Fairfield. So as I picked up his dry cleaning, I dropped my own off.  I drove away thinking, #winning, why had I never done this before?  After all my Dad's receipt said it was only $2.50 per shirt. So the next day I went to retrieve my shirts, imagine my surprise when the bill totaled over $100. Who knew there was a difference between dry cleaning women's shirts and men's? Unfortunately, I know that now.  I did negotiate some of my money back or my Dad's money because the other funny part of this story was they for some reason ran his credit card and not mine.  PS. Dad hopefully you got your check!

I share this story as an example of how all over the place my life seems lately. One attempt to simplify things turns into a circus of a situation.  But I continue to learn to take deep breaths, find humor and not sweat the small stuff. This life thing, you never stop learning.

While much of the past few weeks has been filled with work, deadlines, talking about the MGA Triple Crown Showdown, dreaming about the MGA Triple Crown Showdown, I have taken a time out for some fun.

Wordless Wednesday

In an effort to eat more at home which can prove a challenge for a single person who HATES leftovers. I came across this at Trader Joe's recently. Um, brilliant. Frozen ravoli's with chunks of sauce that you heat in the skillet and is ready in 6-8 minutes! So tasty. It almost seems fresh!  Easy peasy!

Just NO, Missouri

On Saturday I was coming back from STL and pulled into Ozarkland to go pee. Why didn't I stop at nearby McDonalds you ask, because the parking lot was a circus.  While locating the facilities in Ozarkland I saw an adorable red and pink rug and was like I think I'll buy that for my mudroom. It was then that my eyes crossed this......

Holy moly. Trumps America. Get that thing out of the store. I need to get out of this store. Out of his tourist trap. My own fault for stopping in a red barn looking place called Ozarkland to use the potty.
Seriously, what is wrong with you, Missouri? Good grief.

And then these.
Pardon me, while I light up a cigarette and put it out in my Missouri ashtray.

Just NO, Missouri.

Oh and I put the red/pink rug back on the shelf. I refuse to give my hard earned money to places that support racism.
