Stuffin' Tomatoes
I was in search for a light creation to make for dinner and something that would go great with a crisp glass of Riesling! I actually found this in the South Beach Cookbook and it was great!
Baked Tomatoes with Crab
1/2 cup finely ground nuts, such as pecans or walnuts (I used walnuts)
2 large tomatoes, halved
1 cup fresh lump crabmeat, well drained (I didn't have this but I did have Louis Rich Lobster chunks so I used those)
1 cup shredded reduced fat Monteray Jack Cheese (I also did not have any of this so I used Pepper Jack)
1/2 cup black olives, finely chopped
1/2 cup mushrooms, finely chopped
1/2 cup Parsley, finely chopped
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon basil
Preheat oven to 350. Coat a baking sheet with cooking spray. Carve out the tomato halves. Mix together insides of tomato and all the ingredients above. Evenly divide and spoon into the tomato halves. Bake 15 minutes. Enjoy!

On Wednesday this week we surpassed the month mark leading up to the Greater Kansas City Myasthenia Gravis Walk Run and Roll. I truly cannot believe it is almost here! Several months of planning come and gone and here we stand.
We have gotten new sponsorships over the past few weeks that we are very much appreciative of, Alan and Lindsay Holt, Lockton Companies, AB Express, and Dr. Richard Barohn. We are waiting on matching funds from a couple of sources and then our totals will be just over $12,000! Super exciting as our initial goal was to raise $15,000. We are also grateful for the individual donations which truly add up!
We currently have 50 people registered so we are anxiously awaiting runners, walkers, and rollers to register. If you are planning to attend please register here. After March 30, late registrations apply so please take a few seconds and register yourself!
Each of us on the committee have been busy hanging posters through Kansas City this week hoping to generate interest. I was trying to add the poster to my blog but I'm not that computer savvy as it's in a PDF. It turned out amazing. I'm so thankful for my friend Holly's creative eye which worked in conjunction with my friend Lyndsey's awesome logo creation!
We are in search of a few great raffle items to raffle at the event. Ashley has been a rockstar with obtaining raffle items! Watch out for a 1 night stay @ Aloft hotel, dinner @ RA, breakfast @ Ingredient package as well as a few other fun packages! Raffle tickets will be available for purchase at the packet pick up before the walk and at the event for 1 for $5 or 3 for $10.

Oldie but goodie
A few weeks ago one of my favorite little friends in Kansas City broke her arm. Shortly after that I was going through a cabinet and found one of my favorite childhood books, Jenny's in the Hospital, which is about a girl who falls off a swing set on a playground and breaks her arm. I believe it was a book given to me when I was going through medical testing at University of Iowa Hospitals and Clinics just prior to my diagnosis of Myasthenia Gravis. I stopped by for a reading date to share my book with SJ last week. What fun and oh the memories. The funniest being that I had written and spelled my name wrong in the front of the book. Who says I had a Kindergarten teacher for a mom?
12 Months of Giving Back
While my mind has basically been on 1 of 2 things over the last week or two, work or the walk, I realized last week I needed to make a decision on what I was going to do in March to give back as a part of my 12 months of giving back.
I decided I needed to do something simple as to not lose my mind any further! I decided to make a small donation to Friends of JCDS. Friends of JCDS (Johnson County Developmental Supports) is the non-profit side of JCDS where I work. Friends of JCDS provides financial assistance for the purchase of medical equipment, payment of bills, dental services, etc, to those with special needs and developmental disabilities. It's a unique entity of JCDS and through Friends of JCDS many individuals have been able to have their needs met. Friends of JCDS puts on an annual Restyle Runway to raise funds and allow college students majoring in interior design to show off their fashions. This year it will be held on September 23, 2011. I was embarrassed to say that last year I did not make any contributions to Friends of JCDS so that was something that was important to me this year.

I'm a grown up.......maybe
Yesterday I did something very grown up. Ok, well the first part of this of this story is not grown up.
I went into the office to work for part of yesterday so Sunday night I so delicately packed my lunch. After I got to the office I realized I had left my lunch in my fridge, go figure. I'm so out of routine of going into the office to work that it may have been too much to remember to grab my lunch. So I went to Mr. Goodcents and grabbed a sandwich.
And this is the grown up part, I ordered it on wheat bread. Yes, my friends I ordered a sandwich on wheat bread for the first time in 31 years. I've come a long way. Mama, are you proud or what? I'm not gonna lie, it would have tasted better on white.

So March came in like a lion...........
I woke up very early today, hoping to be productive. Work is piling up on me and I do not like to be behind! As I was standing in the bathroom putting on my makeup I heard sirens which appeared to be right in my driveway. A quick glance out the window and I saw a fire truck was parking in front of the neighbors across the street and then an ambulance followed by a stream of police cars.
The home in which all the activity was going on is home to a sweet middle age couple who look after all the neighbors, the mother hen type. I quickly dressed and ran across the street to an elderly neighbor's home. This particular couple especially looks after the elderly lady, bringing her newspaper to her doorstep every morning. I could see her in her window pacing and knew she would be in distress in seeing all the emergency vehicles in the street. As soon as I got to her door she was extremely upset and asked if I knew what was going on. Unfortunately I did not know what was going on I tried to comfort her and reassure her that all would be ok. As the minutes ticked on and nobody was being loaded into the ambulance I realized that things probably were not ok. The waiting turned into an hour and finally we learned that the neighbor had passed away. Such a shock, I just spoke to him on Sunday and learned yesterday that he scooped my walk and driveway while I was in Texas. Life can be so unfair sometimes. He was in his early 50's, leaves behind a wife and two children. A simple yet "slap in the face" reminder that life is short.
Why, I am writing about this you ask, well my mama is out of the country, relaxing on the beach, probably drinking some Sauvignon Blanc so there was nobody to call and gab to in the middle of the day. Mama, it's about time you got an international cell phone!!!! But then you probably wouldn't call that a vacation anymore!
